Cooking with Jack – Left Over Turkey Wraps

Here is the recipe:

Left Over Turkey Wraps

12 Asparagus Spears
2 Red Bell Peppers
3 teaspoon of Honey
2 teaspoon of lemon juice
1/4 teaspoon of salt
1/4 teaspoon of ground red pepper
1/2 cup mayonnaise
4 flour tortillas (8 inch)
4 romain lettuce leaves
8 (1 ounce) slices of cooked turkey breast
2 cups Alfalfa sprouts

1. Preheat broiler/oven
2. Snap off tough ends of asparagus and then steam coverd for 2 minutes or until crisp-tender.
3. cut bell peppers in thick strips and blacken in oven. Place blackened peppers in ziploc for 15 minutes to sweat skins off. Then peel off skins.
4. put peppers, honey, lemon juice, salt and ground red pepper into blender until smooth. Mix with mayonnaise.
5 Warm tortilla. spread mayonnaise mixture lightly onto tortilla. add lettuce, turkey, sprouts and asparagus spear, then roll up tortilla. Serve and eat.
