Cooking with Jack – Gluten free White Chocolate Chip Peanut Butter Cookies

My official first Gluten Free recipe. here it is:

2 cups Peanut Butter (I always use Skippy but any peanut butter will work)
2 cups firmly packed light brown sugar
2 large eggs
2 tsp. baking soda
1 cup white chocolate chips

Directions:
1. Preheat oven to 350°. In medium bowl, with wooden spoon, combine all
ingredients except chips until blended. Stir in white chocolate chips just until
combined.
2. On ungreased baking sheet or baking sheet with a Silpat Mat, drop slightly
rounded teaspoonful about 1 to 1 ½ inches apart. (Do not flatten)
3. Bake 9 minutes or until cookies are puffed and golden. (Cookies will be VERY
soft.) Place baking sheet with cookies still on it on a wire cooling rack and let stand
for 5 minutes. Remove cookies from sheet and cool completely.
