Victoria’s Warm Greek Pasta Salad2012-11-28

- 12 Ounces Penne Pasta
- 2 Ounces Feta Cheese
- 1/2 Cup Sliced Black Olives
- 2 Roma Tomatoes
- 1 Cup Onions, chopped
- 1 1/2 Teaspoon Garlic, chopped
- 3 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Lemon Juice
Chop onions and garlic and saute in 1 tbsp of heated oil for 5 minutes.
Add the olives and chopped tomatoes into the pan. Cover and simmer for 10 minutes.
Cook pasta according to package directions. Drain pasta and put into a bowl.
Add the sauted onions, tomatoes and olives on top of pasta. Mix and crumble the feta cheese within.
Mix lemon juice, vinegar, oil, salt and pepper (to taste) in a side bowl. Pour over pasta and toss.
An alternative is to toss cooked pasta with raw tomatoes, olives, chopped garlic and dressing. Any kind of pasta will suffice.
