This is a really simple recipe that is quite substantial as it’s made with feta, bacon, and avocados. We learned this recipe down in Australia. It was shown to us by our two cop friends down under, who didn’t know they could cook. One day we were out playing golf and got back tired and hungry. They said “we’ll whip you up a pasta, you’ll love it”, and we did!
- 2 Cups Fresh Tomatoes, diced
- 1/2 Cup Bacon, diced
- 1 Package Penne Pasta
- 1 Cup Crumbled Feta Cheese
- 2 Whole Avocados, sliced
- 1 Handful Fresh Basil Leaves
- Pinch Salt
- Pinch Pepper
- Pinch Red Pepper Flakes
Cook the bacon in a seperate pan, until it begins to get crispy. Put a pot of water on high, to boil.
In a separate pan, add olive oil, and the tomatoes. Add in the salt, pepper and red pepper flakes, and cook for about 10 minutes.
After 10 minutes, salt the boiling water, and add your penne pasta to the boiling water.
Mix the bacon in with the tomato sauce, and let it cook for about 10 more minutes.
After 10-12 minutes, drain the pasta. Add the pasta into the pan with the tomato/bacon sauce. Mix well, ensuring the pasta is completely covered.
Sprinkle the feta cheese while continuing to mix. Place the pasta into a large serving bowl, and top with sliced avacado and fresh basil leaves. Serve.
