- 4 6 Ounce Fresh Atlantic Salmon Filets
- Olive Oil
- Cracked Black Pepper
- Kosher Salt
Rub salmon fillets with oil. Season generously with salt and pepper.
Over high heat, heat oil in skillet until very hot. Sear salmon fillets, skin side up, for 2 minutes per side, until browned.
Transfer to 400 degree oven, until just opaque, or to desired doneness.
Kosher salt grains are larger than regular table salt grains, when meats are coated in kosher salt the salt does not dissolve readily; the salt remains on the surface of the meat longer to draw fluids out of the meat.
