  • 1 Bunch Rapini
  • Boiling Salted Water
  • 1/4 Teaspoon Red Pepper Flakes
  • 2 Tablespoons Olive Oil
  • 1 Clove Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh Parsley, chopped


Step 1

Cut off ends of rapini, wash well. Add to salted rapidly boiling water and blanch for 2 minutes. Drain and put into an ice bath. Drain again and remove most of the water, saving some to toss later.

Step 2

Heat oil in a pot. Add chopped garlic, some red pepper flakes, salt and black pepper. When hot add the rapini and some of the draining water and cook for a couple of minutes. Add parsley and serve immediately.
