Potato Leek Soup

Ingredients

  • 1/8 Teaspoon Red Pepper Flakes
  • 2 Tablespoons Butter
  • 2 Tablespoons Oil
  • 3 Leeks, diced
  • 1/2 Teaspoon Sea Salt
  • 2 Cloves Garlic, chopped fine
  • 2 Litres Chicken Broth
  • 3 Medium Potatoes, diced
  • 35% Cream
  • Chives

Method

Step 1

In a Soup pot add red pepper flakes, butter and oil - when the butter is foaming add the leeks and the salt, cook until just a bit beige and soft. Add garlic and cook until fragrant, then the chicken broth and the potatoes, simmer until the potatoes are done.

Step 2

Use the immersion blender until the soup is well blended, taste for salt and pepper.

Step 3

Serve with the few drops of cream and sprinkle with chives and enjoy!
