Everyone loves these Sweet Potatoes, they taste so delicious and carmelized. Easy and really worth a try.
- 2 Pounds Sweet Potatoes, peeled and cut into 1/2" rounds
- 1 Clove Garlic, pressed
- 1/2 Teaspoon Herbs de Provence
- 1/2 Teaspoon Sea Salt
- 1/2 Teaspoon Black Pepper, freshly ground
- 1/4 Cup Olive Oil
Prepare a cookie sheet with aluminum foil, topped with a sheet of parchment paper, and set aside. Preheat the oven to 400 Degrees.
In a mixing bowl add the garlic, herbs de Provence, sea salt, black pepper and olive oil. Mix well, add the sweet potato slices and toss well. Keep the bowl with the oil mixture.
Lay the sweet potato slices on the prepared cookie sheet. Bake for 20 minutes. Turn the slices and bake for 10 more minutes. Turn again and bake for 5 minutes.
Remove the tray of potatoes from the oven and place the slices into the mixing bowl with the oil mixture in it. Toss carefully, garnish with a spring of parsley and enjoy!
