Linguine with Tiger Shrimp, Chourico, and Oyster Mushrooms

  • 6 Slices Smoked Portuguese Chourico
  • 1/4 Onion, diced
  • 1 Clove Garlic, sliced
  • 6 Tiger Shrimp
  • Handful Oyster Mushrooms, torn into strips
  • Pinch Crushed Chili Peppers, or to taste
  • 3/4 Cup Basic Tomato Sauce
  • Splash White Wine
  • Fresh Parsley, chopped (optional)
  • 2 Tablespoons Olive Oil
  • 1 Package Linguine


Step 1

Bring a large pot of salted water to a boil. Once boiling, add linguine to water.

Step 2

Heat olive oil in saute pan. Season shrimp with salt and cook 1.5 min each side and remove from pan.

Step 3

Add onion, saute until soft but not brown. Add garlic, sausage and mushrooms saute for 4 minutes more.

Step 4

Add splash of white wine and tomato sauce. Add reserved shrimp and let them finish cooking 3 minutes. Taste and adjust seasoning.

Step 5

When linguine is al dente, strain and add to sauce. Garnish with fresh parsley.
