- 2 Packages Chocolate Wafer Cookies
- 1 Litre 35% Cream
- 1/4 Cup Sugar
- 1 Teaspoon Vanilla
- Raspberries or Strawberries
Place 4-6 wafer cookies in the food processor and pulsed until processed into a fine crumble. Place in a small bowl and set aside the crumbs. Wipe the processor bowl clean.
Add the cream, sugar and vanilla to the processor. Tip the machine on an angle and whip the cream until desired consistency.
Using a nice dish, begin assembling the pie in layers, beginning with the cookies and finishing with the cream. Layer the cream on top of the cookies for 3-4 layers and sprinkle the cookie crumb topping on the top layer to finish. Place in the fridge for 8 or more hours.
Garnish with fresh raspberries or strawberries and enjoy!
