A slice of this makes a great side for dinner, a lunch, a breakfast or a snack. Perfectly balanced and delicious, serve it hot, warm, or cold.
- 2 Pounds Yellow and Green Zucchini, sliced 1/4" inch
- 3 Large Tomatoes, sliced 1/4" inch
- 2 Teaspoons Kosher Salt
- 2 Onions, sliced thinly
- 2 Tablespoons Olive Oil
- 2 Cloves Garlic, pressed
- 1/2 Teaspoon Black Pepper, freshly ground
- 2 Teaspoons Dried Thyme
- 3 Tablespoons Olive Oil
- 1 Cup Bread Crumbs
- 1 Cup Parmesan Cheese
- 1/4 Cup Onion, chopped finely
- 1 Tablespoon Olive Oil
Prepare the vegetables. Place the zucchini slices in a colander. sitting in a large bowl sprinkle 1 teaspoon of salt over them, mix well with hands, set aside for 45 minutes.
Prepare a cookie sheet with a double thickness of paper towel. Cut the tomatoes in slices and place them on the paper. Salt with 1/2 teaspoon of salt and set aside for 30 minutes.
Heat a sauté pan on medium high heat, add the olive oil and the onions, sprinkle with and 1/2 teaspoon salt and cook stirring often for about 30 minutes, until nice and brown, set aside to cool.
Make the dressing. Squeeze the garlic into a small bowl, add the black pepper, thyme and olive oil, mix well with a fork, set aside.
Preheat the oven to 400 º F. Prepare another cookie sheet with double thickness of white paper towel. Lay the zucchini slices on the paper towels, lay another double thickness of paper town on top and press down on the vegetables to remove as much water as possible. Do the same with the tomatoes.
Prepare a 9 x 17 Pyrex dish by oiling, place the zucchini slices in the dish, spread the fried onions as evenly as possible. Using a teaspoon, put half of the dressing over the onions. Place the tomatoes on top, the use up the rest of the dressing, making sure to get some on each tomato.
Place in the 400 º oven and bake for 45 minutes.
Prepare the topping. Tear the bread into 1/4's and process in the food processor for about 10 seconds of on/off pulses. Grate the Parmesan. Place the bread crumbs, cheese, onion and oil in a bowl mix well and set aside.
After 45 minutes, remove the gratin, increase the heat to 450 º F and sprinkle the bread crumb mixture over the tomatoes evenly. bake for another 10 minutes. Remove, let it rest for about 10 minutes, and Enjoy!
