Coffee Cake

Ingredients

  • 1 Tablespoon Unsalted Butter
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Flour
  • Cinnamon
  • 1/4 Pound Unsalted Butter
  • 1 Cup Sugar
  • 2 Large Eggs
  • 2 Teaspoons Vanilla
  • 1/8 Teaspoon Salt
  • 2 Cups All Purpose Flour, sifted
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Baking Soda
  • 1 Small Container Sour Cream

Method

Step 1

Preheat the oven to 350 degrees. Butter an 8" round cake pan, with a hole in the center and set aside. Mix together the first five ingredients for the crumb topping and set aside in a small bowl.

Step 2

Cream the butter and sugar. Add eggs one at a time. Beat well. Add the vanilla, mix.

Step 3

Dissolve baking powder and baking soda in the sour cream.

Step 4

Add the sour cream mixture along with the flour 3 times, alternately mixing just a bit each time. Over mixing makes a tough cake.

Step 5

Put the mixture into the buttered pan, cover with the crumb topping.

Step 6

Bake at 350 degrees for about 35 minutes. If using a convection oven 325 degrees for the same amount of time. Either way, test with a toothpick, that comes out of the cake clean, the cake is done.
