Coconut Bake

The coconut bake is a classic island dish, and should be served “Breakfast in Grenada” style with Salt Fish, and Cocoa Tea!


  • 1 Coconut, Opened with Meat Blended
  • 2 Cups Flour
  • 1 Tablespoon Baking Powder
  • 1 Tablespoon Salt
  • 1 Tablespoon Sugar
  • 1/4 Pound Softened Butter


Step 1

If not already done, crack coconut, and remove meat. Blend the coconut meat in the blender using a bit of water.

Step 2

Preheat the oven to 350 degrees.

Step 3

Mix all of the dry ingredients together add the butter, mix well with hands, add the blended coconut mixtures, mix well, making a dough.

Step 4

Break the dough into 4 even pieces, make into 1½ inch high rounds, place on a greased baking sheet and bake for 45 minutes to an hour until golden brown.

Step 5

Serve with the salt fish topping on the same plate as the golden coconut bakes, with a cup of delicious Cocoa Tea for a complete "Breakfast in Grenada".
