- Olive Oil
- Salt, to taste
- Pepper, to taste
With the rack in the middle position, preheat the oven to 400’F.
Remove from chicken from the fridge and pat dry with paper towels.
Brush the outside with oil. Season with salt and pepper.
Set chicken in roasting pan. Roast until the thermometer reads 175F, about 1 hour.
Allow 15 minutes to rest uncovered in a warm spot in the kitchen.
