Bok Choy Salad2012-11-28

A delightfully different salad with a sweet and sour flavouring. This is definitely a keeper! This is another of Penny’s recipes. I am grateful to her!
- 2 Heads Bok Choy, chopped
- 1 Bunch Green Onions, chopped
- 1 Teaspoon Butter
- 1/2 Cup Sesame Seeds
- 1/2 Cup Sliced Almonds (or slivered)
- 2 Packages Mr. Noodles, crumbled (just the noodles)
- 1 Tablespoon Soya Sauce
- 1/3 Cup Sugar
- 1/4 Cup Vinegar
- 1/2 Cup Extra Virgin Olive Oil
- Sesame Sticks
In large salad bowl, add the chopped bok choy and green onions.
On medium high heat, warm the butter in a pan. When melted, saute the sesame seeds, almonds and crumbled mr. noodles (only the noodles) until a light, golden brown.
In a shaker or jar with a lid, combine soya sauce, sugar, vinegar and olive oil. Shake well until combined.
Add all ingredients together and mix, and finally add a handful of sesame sticks for a real jolt of flavour. Enjoy!
