Baked Spanish Rice

Ingredients

  • 3 Tablespoons Butter
  • 3 Tablespoons Onion, minced
  • 1/4 Teaspoon Salt
  • 2 Cups Rice, uncooked
  • 3 Cups Chicken Broth
  • 1 Tablespoon Parsley, fresh chopped
  • 1/4 Teaspoon Thyme, dried
  • 1/8 Teaspoon Cayenne Pepper
  • 1/8 Teaspoon Black Pepper

Method

Step 1

Preheat oven to 400 degrees.

Step 2

Melt butter in an ovenproof casserole, add onion and some salt and cook until the onion is transparent.

Step 3

Add rice stir well until it is completely coated. Add the chicken broth, parsley, thyme, cayenne and black pepper, stir well, cover and bake at 400 for 20 minutes.

Step 4

Remove from the oven and allow the rice to rest for 10 minutes.
