  • 1 Jar of Baby Dill Pickles (No Garlic)
  • Toothpicks
  • 1 lb Package of Maple Bacon
  • DIP:
  • 3/4 cup Mayonnaise
  • 1 tsp Cajun Spice
  • 1 tsp Chipotle Chili Pepper


Step 1

Drain all of the pickles from the jar and allow them to sit out on a paper towel for about 1 hour to absorb some of the excess moisture.

Step 2

Meanwhile, soak the toothpicks in a cup of water.

Step 3

Preheat the oven to 450 F. Prepare a baking sheet lined with aluminum foil with a cooling wrack on top sprayed with cooking spray.

Step 4

Cut the bacon strips in half and wind them around the pickles. Secure them with a toothpick and pop them on top of the cooling wrack.

Step 5

Roast the pickles, turning once in the cooking process, until the bacon is crispy and browned, about 20-25 minutes.

Step 6

While the pickles are cooking, mix together the mayo with the cajun and chipotle powders.

Step 7

Serve the hot pickles on a platter with the dip on the side.
