Baby Back Pork Ribs with Herb Potatoes2012-11-29

- 16 Baby Back Pork Ribs
- 20 Peppercorns
- 2 Bay Leaves
- 4 Tablespoons Olive Oil
- 1 1/2 Teaspoon Salt
- 1 1/2 Teaspoon Black Pepper, freshly ground
- 1/4 Teaspoon Hungarian Paprika
- 1/2 Lime, juiced
- 2 Garlic Cloves
- 12 Small Potatoes
- 1 Teaspoon Herbs De Provence
Bring a pot of water to a boil. Add 20 pepper corns and 2 bay leaves to boiling water. Add the ribs and cook for 20 minutes.
Prepare potatoes. Wash and clean the potatoes. Mix 1 tbsp olive oil, 1/2 tsp salt, 1/2 tsp pepper and 1 tsp herb de provence into a bowl. Squeeze in one clove of garlic. Toss with potatoes. Place on a pan covered with tin foil. Add to 350 degree oven and cook for 20 minutes. Gently shake the potatoes so they don't stick to the tin foil. Cook for another 20 minutes.
Remove ribs from boiling water and dry with paper towels. Place boiled ribs in a hot frying pan. Add 1/2 tsp salt, 1/2 tsp pepper, and 1 tbsp of olive oil and cook for 10 minutes gently browning both sides.
Prepare marinade for ribs. Combine 1 tbsp olive oil, 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp of hungarian paprika, squeeze the juice from 1/2 lime and squash 1 garlic clove into bowl.
Remove ribs from pan and apply marinade to both sides. Place sauced ribs on a pan covered with tin foil and put in oven with the potatoes for 10 mins. Make sure the ribs are covered in foil to maintain their juices. Remove tin foil from ribs and place under broiler for 5 minutes to brown potatoes.
Put potatoes briefly back into herb de province sauce and mix them up. Cut up ribs. Serve with Masi Amorone Italian red wine or beer!
